Super Easy Super Chili

Because the picture I took, didn't look like chili.
The forecast called for the Blizzard of 2011.
We got rain.  I made chili.
This chili is great because it is super easy and packed with protein and fiber.  The salsa provides the onions, peppers, and tomatoes without the hassle of slicing and dicing.  Plus, you'll have a giant pot of chili for about ten dollars.  What's up economy?

Ingredients:
1 can of kidney beans (do not drain)
1 can of black beans (do not drain)
1 jar of chunky salsa
1/2 teaspoon ground cumin
1/2 teaspoon ground or flaked red pepper
Optional: 1 cup vegetarian "meat" crumbles, found in the frozen section, next to the veggie burgers, vegetarian "meat" is made out of soy and vegetable proteins.  It looks and tastes exactly like ground meat and will take on the spices of whatever you cook it in.


Combine all ingredients in a large sauce pan.  Cook over high heat until it lightly starts to boil.  Turn heat down to a simmer and stir occasionally for about 2 hours.  Top with your favorites such as avocado, cilantro, cheese, or tortilla chips and enjoy for a cozy dinner!
